Bacon-Wrapped Adobo Chicken and Potatoes


Do you live with a snorer?  I live with two.


This is Maggie.  She's the worst offender.  I can smack Mike on the arm and he'll turn over.  Maggie is relentless.  She sleeps on her bed at the the foot of our bed.  So not only do I have to try and get her to re-position enough to stop snoring, but I have to leave the warmth and comfort of the blankets.  I hate it.

The snoring only bugs me when I'm trying to fall asleep.  Once I pass out, I'm good to go.  But when it's 3am and I just put Thing 2 back down for the night, getting Maggie to comply is not on the top of my priority list.  She's lucky she's cute enough to stay in our room even if she is a little Howitzer. 

And now for food.



Bacon-Wrapped Adobo Chicken & Potatoes

Ingredients:
6 chicken drumsticks, skin removed
6 slices thick-cut bacon
salt and pepper to taste
1 onion, cut into large wedges
1 1/2 pounds Yukon gold potatoes, quartered

Seasoning Mix:
1 tablespoon dried chives
1 tablespoon dried basil
1 1/2 teaspoons garlic powder
1 1/2 teaspoons adobo seasoning  {I looked at 3 different stores looking for this spice - Safeway has it}
1 1/2 teaspoons black pepper
1/2 teaspoon salt, or to taste

Directions:
  1. Preheat oven to 400 degrees F.
  2. Cut each piece of bacon  in half and lay over the top of each drumstick.  Overlap pieces so that the bacon covers the meat of the chicken; press down to help adhere bacon to chicken.  
  3. Place wrapped chicken in a 9" x 13" baking pan, season with salt and pepper.  Place onion into baking dish, be sure not to cover the bacon.  Push potatoes down into the spaces between the chicken pieces and around the edge of the dish.
  4. Combine the seasoning mix ingredients and sprinkle the seasoning over the chicken and potatoes.
  5. Bake in the preheated over for 1 hour, until the bacon is cooked and the potatoes are tender.  Half way through cooking, toss onions and potatoes to coat with bacon fat from pan.  Before removing pan from oven, turn on the broiler and cook for 3 to 5 minutes to crisp up bacon.

  2. Maggie! You're adorable. I want an English Bulldog so bad! My hubby kind of snores too..so I might one day have two snorers as well!

    1. Mike's dad always wanted an English Bulldog, but they ended up with Basset Hounds instead. Mike got Maggie 5 years ago from a friend who had taken her in and couldn't keep her anymore. We were hoping to breed her so we could have a puppy, but she came fixed. Oh well. Maggie out snores Mike on a very very regular basis. Oh, and her previous owner named her Mrs. Higgins. Hehe.
