Aunt Cindy's Back with a really yummy sounding apple pie!
Raw Apple Pie with Cashew Cream
Crust:
2 Cups
Brazil Nuts
2 Cups
Almonds
1/3 tsp sea
Salt
1 tsp
Cinnamon
1 ½ cups
pitted dates
Process
until fairly fine and then press into pie plate
Filling:
3-4 Apples
1 tsp Nutmeg
2 tsp
Cinnamon
¾ cup
raisins (soaked in water for 2 hours)
2-3 T. Fresh squeezed lemon juice
Process
together til apples are chunky or use a saladucco
Apple Glaze:
½ cup Agave
Nectar
½ Apples
½ tsp
cinnamon
Process in
blender until smooth
Cashew Cream:
1 ½ cups
Cashew (soaked for 3 hours)
1 cup water
½ cups
pitted dates
1 tsp
vanilla extract
Process in
blender until smooth-add more water if needed.
Pour on top of each piece of pie.
