One of Mike's favorite foods is waffles. He got a waffle iron for Christmas two years ago, but it sat in the cupboard for months. We were at the store, he remembered the waffle iron, and he grabbed some store bought waffle mix. I made him waffles, but they were sadly not up to his standards. No shock there. He's a die hard Belgian Waffle eater.
Months later he had enough. Mike wanted the real thing. So one Saturday morning he laid it on super thick and asked me the find a Belgian Waffle recipe. I went googling and found a recipe. I cooked, Mike and the boys ate, and I got a foot rub for my awesome waffles. It was totally worth all the dishes.
Belgian Waffles
From Emeril Lagasse
Ingredients:
2 cups cake flour {or 1 3/4 cups flour sifted together with 1/4 cup cornstarch}
2 teaspoons baking powder
1/2 teaspoon salt
4 large eggs, separated
2 tablespoons sugar
1/2 teaspoon vanilla extract
4 tablespoons unsalted butter, melted
2 cups milk
Non-stick cooking spray
Directions:
- Preheat waffle iron on high setting.
- In a bowl, sift together flour, baking powder, and salt. Set aside.
- In another medium bowl, beat together the egg yolks and sugar until the sugar is completely dissolved and eggs have turned a pale yellow. Add vanilla, melted butter, and milk to the eggs and whisk to combine. Combine the egg mixture with a the flour mixture and whisk until just blended. Do not over mix.
- In a third bowl, beat the egg white until soft peaks form. {I start my egg whites in the stand mixer while I mix everything else together.}
- Using a spatula, gently fold the egg whites into the waffle batter until just barely incorporated. {Think cutting the egg whites in, not stirring.} Do over mix.
- Coat the waffle iron with non-stick cooking spray and pour enough batter in the iron to just cover the waffle grid. {I find my waffle iron does well with 3/4 cup and batter per waffle.}
- Close and cook as per manufacturer's instructions until golden brown, about 3 to 5 minutes. Serve immediately.

ReplyDeleteI would love to Sophie! This recipe requires more dishes than I like to do, but Mike gets all sweet and bribes me with back rubs and vacuuming...it's hard to say no. ;)
