Think I've made it pretty clear how much I like The Chew. Well, now that I'm working I have to Tivo all the episodes and try to catch up the next morning. But...but, but...I did score this awesome recipe from Clinton Kelley the other day.
Mike is a Dean's French Onion Dip eater for life. But after I saw Michael Symon's and Carla Hall's reactions to Clinton's dip I knew I had to try it for myself. Mike L-O-V-E-D the dip. he said it was right up there with Dean's. He liked it so much he wouldn't miss his store bought dip if made him the homemade stuff. That's saying a lot. Thanks Clinton!!
French Onion Dip
Adapted from Clinton Kelly
Ingredients:
2 tablespoons olive oil
1 large yellow onion, cut into even 1/4" thick rings
1 clove garlic, minced
1 1/2 cup sour cream
3/4 cup mayonnaise
1/2 teaspoon salt
1/4 teaspoon pepper
Directions:
- Heat the olive oil in a sauté pan over medium heat. Add the onion, and season with a large pinch of salt, then toss to coat in oil.
- Arrange the onion into an even layer in the pan, and cook, stirring occasionally, but retaining an even layer. Cook for 5 minutes until onions soften. Reduce heat to medium-low. Cook until the onions caramelize, about 10 to 15 minutes. Remove from heat and stir in the garlic.
- Add the sour cream and mayonnaise to the bowl of a food processor. Add the onions, garlic, and season with salt and pepper. Pulse until thoroughly combine. Then, transfer to a bowl and store in the refrigerator. Serve chilled.
You have to eat it with the bag of chips next to you and the bowl of dip on your belly. Ask Clinton. He'll tell you.
