Guest Post: My Happy Place... ~ Peanut Butter Mug Cake


Hello everyone! I'm Sophie from My Happy Place… First of all, I'd like to thank Julie for having me today! She's so awesome and I adore her {and her} blog. Also, we have some good shtuff in store for you this next month! But for now, let me share with you a little bit about me, my blog, and a yummalicious recipe! 

So this is me. I'm a 14 year old, home schooled, Christian girl living in Namibia, Africa where my family and I will be serving as missionaries for 2 years! I have a passion for food and photography that grows each and every day, and I sure hope my blog expresses that. I come from a long line of amazing cooks and bakers, and I am more than happy to keep that line going! So stop by sometime to learn a little more about me and of course drool over some yumminess!

 Of course I wasn't going to stop by without sharing a little something… :) I just LOVE all the single serving recipes that are out there! From a 5-Minute Carrot Cake to a cute little Apple Crisp, I just love the idea of having a dessert all to myself with minimal effort, time, ingredients, and clean-up! This one I'd seen awhile ago and wanted to make right away! It's super light and fluffy and amazing. The only thing was that it made so much cake {I'd suggest splitting it up into two servings}, that it was a little difficult to get it cooked all the way through just right without the top being a little under-done and the bottom being a little over-done. Other than that little snippet it was so delicious! 


Peanut Butter Mug Cake
recipe from//Kirbie's Cravings

4 tablespoons all purpose flour
4 tablespoons white granulated sugar
1/4 tsp baking powder
1 egg
3 tablespoons peanut butter
3 tablespoons milk
3 tablespoons vegetable oil

Combine all ingredients in an oversized coffee mug. Whisk well with a small whisk until smooth. Microwave on high for 1 1/2 minutes and then take it out to check to see if it is done. If not, continue to microwave in thirty second intervals. Mine was done at 2 minutes. You don’t want to overcook it or it will become rubbery. You can also make this into two smaller-sized mugs. You can mix the batter all in one mug and then pour half into another mug. Make sure you cook each one individually.

Holy cannoli!  How amazing do these cakes sound?  I think I need to make myself on as soon as the Things go down for their afternoon nap.  The only better than your own dessert is not have a 1 and 3 year old staring at you and bugging into submission until you share a bite.  Haha!  Thanks so much to Sophie for sharing this super yummy cake.  Seriously y'all Sophie is the cat's meow.  I still have to wrap my head around her being 14 when we talk.  I completely forget.  :)

  3. Sounds deLISH! Love quick tiny cakes. Thanks for sharing, and enjoy your Namibian adventures. Missions is such an exciting place to be. My husband and I love it! (Just returned from a few months in Italy serving with YWAM.)
