Sugar-Coated Sundays: Oatmeal Chocolate Chip Cookies

Oatmeal Chocolate Chip Cookies
From Better Homes & Gardens Cookbook

Ingredients:
3/4 cup butter, softened
1 cup packed brown sugar
1/2 cup granulated sugar
2 eggs
1 teaspoon vanilla
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon ground cinnamon
1 3/4 cups all-purpose flour
2 cups rolled oats
8 ounces semi-sweet chocolate chips

Directions:

  1. Preheat oven to 375 degrees F.
  2. In a large bowl, beat together butter and sugars until fluffy and light in color.  Add eggs and vanilla; mix to combine.
  3. In a medium bowl, add flour, baking soda, baking powder, and cinnamon.  Add flour mixture to butter mixture in two additions, mix until just combined each time.
  4. Stir in rolled oats and chocolate chips.
  5. Drop dough by tablespoonfuls onto a Sil-Pat lined cookie sheet (or ungreased cookie sheet).  Bake for 8 to 10 minutes {mine were good at 8min 30 seconds} or until edges are golden.  Cool for 2 minutes; then remove to wire rack and cool completely.
