Sugar-Coated Sunday: Banana Bites Two Ways

Today is recipe 3 out of 4 from Otto's birthday party.  These banana bites were really fun to make and can be used in so many different ways.  

If you hadn't noticed we did a super hero theme for the party.  I found these superhero posters online and knew they would make great decorations.



I found some great superhero masks for sale on Etsy at Bessie Pooh.  Pick one hero, Bessie emails you the PDF file with the print out and instructions so your mask is the best it can be.


We got the Batman mask, but there are tones of different heroes to choose from.

I put together a pretty good spread complete with cheesy food labels {printable HERE} -  my favorite thing to do at a party.  There were Furious Egg Rolls, Thor's Hammer Bites, Dare Devil Dip, and all other kinds of super hero snacks.



I made white chocolate dipped pretzels with green nonpareils - Hulk's Gamma Pretzels - and cut red vines in half for Wolverine Claws.  


To make it look like I was making an effort to serve something healthy, I made two types of banana bites - Super Sprinkle Bites and Captain America's Cream Cheese Stacks.  

Next Sunday, the pièce de résistance - Batman Birthday Cake!


BaNilla Sandwich Cookies (Superman Bites)

Ingredients:
Mini Nilla wafers
2 to 3 bananas, cut into bite sized slices
Peanut Butter
Sprinkles  {I used blue and yellow nonpareils and red sanding sugar for Superman}

Directions:
Smear the bottom of two Nilla wafers.  Place a banana slice between the peanut butter sides of the wafers to make a sandwich.  Sprinkle banana edges with sprinkle mix.  Done!


Banana Stacks (Captain America's Shield)
Adapted from Recipe.com

Ingredients:
2 bananas, cut into bit sized slices
Whipped cream cheese
Red food coloring
Blue candy melts  {or white candy melts and blue food coloring}
Mini rice cakes  {I was cheap and used the extra Nilla wafers}

Directions:
  1. Mix cream cheese with red food coloring until more red than pink - a good red depending on your food coloring brand; set aside.
  2. Melt candy melts according to package directions - if using white with blue food coloring, mix in food coloring after the candy is melted.  Spoon melted candy into star molds and refrigerate until firm.
  3. Spread rice cake with tinted cream cheese (or Nilla wafer flat side down).  Top cream cheese with banana slice.  Spread bottom for candy star with cream cheese and place, cream cheese side down, on top of the banana slice.
I think these would make great 4th of July snacks too.  I'll probably used crushed blueberries for the stars next time.  But blueberries, 1, 2 and 3 year olds don't mix with light-ish carpets.  :)
