Tostada Pizza

I have to tell you all I made a major life decision.  I quit my job.  I got a new one, but I quit my 9 hour a day one.  I feel like a monumental weight has been lifted off my shoulders.  I have time for myself, my family, happiness.  I feel like a completely different person.  It's wonderful.

Since we're talking about happy stuff, I'm giving you something EASY to make for dinner.  This pizza is a breeze and you can dress it up however your family likes it.  I we go pretty basic at our house, but the possibilities are endless.

Tostada Pizza

Ingredients:
Store bought or homemade pizza dough
Flour
Non-stick cooking spray
1 pound ground beef
1 can refried beans
2 cup cheddar cheese

Garnish:
Sour cream
Shredded lettuce
Dice tomatoes
Sliced black Olives
Avocados

Directions:

  1. Preheat oven to 375 degrees F.
  2. In a large skillet over medium-high heat, cook ground beef until brown and cooked through.  Drain any grease; set aside.
  3. Heat refried beans in microwaveable bowl (cover with a damp towel) for 1 minute 30 seconds.  Stir; set aside.
  4. Spray a pizza pan with non-stick cooking spray and dust with flour.  Spread out pizza dough on pizza pan.  Bake dough for 5 to 7 minutes.
  5. Remove dough from oven and top with refried beans.  Spread evenly to within 1/2" of the dough's edge.  {I never use all the beans, don't feel like you have to.}  Top beans with ground beef.  Bake for 5 minutes.
  6. Top pizza with cheese and bake until cheese in melted and crust is golden brown.
  7. Remove from oven, slice pizza and top with your favorite tostada fixings.
