Buckeyes

Are you ready for game day?!?!?!?  We are!  Today is the day the Buckeyes have their annual game against that state up north.  To be honest, it's only the game that matters in our season. We could be 0-11, but if we beat Michigan all is right in the world. 

In honor of our beloved Buckeyes...I'm making, well, Buckeyes.  These super delicious peanut butter and chocolate candies are a tradition at my house each year when Ohio State plays Michigan.  Grab you Buckeye beads, put on your scarlet and gray, and lets get cheering for the Buckeyes!

Now that you're in the mood, I think we are ready to start cookin'.



Buckeyes

Ingredients:
1 - 18oz jar creamy peanut butter
1/2 cup butter, softened
1 pound confectioner's sugar
1 tablespoon vanilla
12oz chocolate chips
2oz parafin wax, optional

Directions:
  1. In a large bowl, cream together peanut butter, butter, confectioner's sugar, and vanilla until smooth.
  2. Roll peanut butter mixture into bit sized balls.  Place peanut butter balls onto a baking sheet lined with waxed paper.  Chill peanut butter balls for at least 1 hour.
  3. In a double boiler set up, melt together chocolate chips and wax.  Once melted, stir the to thoroughly combine.
  4. Insert a toothpick into the center of one peanut butter ball.  Use the toothpick to dip the ball into the melted chocolate.  Be sure to leave a circle of peanut butter showing at the top of the candy {this is what makes it look like a Buckeye}.  Dip the ball once more, leaving peanut butter showing and then place back onto the waxed paper.  Repeat with remaining peanut butter balls.
  5. Refrigerate at least 15 minutes, or until ready to serve*
  6. *If you are not using parafin wax, you will need to refrigerate your candy until the chocolate is set, about 1 hour.


If you are in a hurry, parafin wax can be a great option.  The wax makes the chocolate set at room temperature and does not need to be refrigerated.  Parafin wax is safe to digest.  And unless you eat the entire batch yourself, you're really not consuming very much at all.  Parafin wax can be found at your local grocery store in the canning section.

    I know all about Buckeyes (the candies) and Buckeye fever (football)! ;)
