I'm a guacamole snob. I'm from California and I've lived in Arizona since I was 4 years old. Needless to say I've had avocados and guacamole around my entire life. I'm not a guacamole purist per say, but I know one thing...it should taste good. I've never been able to find a store bought guacamole that I liked. I try a new one here and there off someone's suggestion, I don't like it, and then I question my friendship with that person.
Kidding.
The other day I was at Costco with my mom, hunting a set of 2 cake stands for $20 {I couldn't find them anywhere, grrrr}. Mom bought a pack of pre-made guacamole and I looked at her like she was crazy. The women who shares my love for all things avocado was buying store bought guacamole?? She told me it was the the closest to homemade in a store bought product she had found. I trust my mom on these things. So after years of yet again swearing off store bought guac, I gave in. She handed me half her twin pack and said if I didn't like it, she would take it back.
I tried it and I liked it. I really liked it!
If you like guacamole and are weary of store brands, give this one a go. I'm not being paid or compensated to talk about this brand. I'm just super picky about and I want to help out anyone else who doesn't dig store brand guac {and also hates paying $1/per avocado in the off season for some green goodness}.
Oh, and these yummy rolled up tortillas of fun would make great Super Bowl food too.
Just sayin'.
Ingredients:
1 tablespoon vegetable oil,plus more for brushing
1 medium onion, finely chopped
1 clove of garlic, minced
1 pound ground beef
1/2 cup salsa, plus more for dipping
2 teaspoons chili powder
1/2 teaspoon salt
1/4 teaspoon pepper
10 -6" flour tortillas {I get around 12 taquitos from this recipe}
1 cup shredded cheddar cheese
Sour cream, for dipping
Directions:
- Heat oven to 400 degree F. Heat the oil in a large skillet over medium heat. Add the onion and garlic and cook them for 3 minutes, stirring often. Add the beef and use a wooden spoon or a spatula to break it up while it cooks, util it is no longer red, about 3 minutes. Stir in the salsa, chili powder, salt, and pepper. Cook the mixture over low heat, stirring occasionally, for 10 minutes.
- Place the tortillas on a plate and cover them with damp paper towels. microwave them until warm and pliable, about 45 seconds. Top each tortilla with 1/4 cup of the beef mixture, spreading it to an inch from the edges. Sprinkle cheese evenly over the beef.
- Roll up the tortillas and place them on a foil-lined baking sheet with the seam side down. Brush the taquitos lightly with vegetable oil, then bake them until the filling is heated through and the tortillas are lightly browned, about 8 to 12 minutes. Serve them hot with sour cream, salsa and/or guacamole.
