Crunchy Salmon


Sunday is wine and cookies night.  My friend Jamie comes over, we hang out and drink wine, and Thing 1 gets cookies to keep him happy.  Awesome idea, I know! She is a vegetarian, but eats fish. We've talked salmon quite a few times now and in her honor I'm sharing this salmon recipe.


Crunchy Salmon

Ingredients:
2 tablespoons honey mustard
1 ½ pounds salmon, cut into 4 fillets
French's fried onions

Directions:

  1. Preheat oven to 400 degrees F.  Line a baking sheet with foil.
  2. Place salmon fillets skin-side down onto prepared baking sheet. Spoon honey mustard on top of salmon fillets. Top with canned fried onions.
  3. Bake for 15 minutes.  If onions begin to brown too much, lay a piece of foil over the top of the salmon.

Foil lined pans are the best trick ever!  The skin on the fish sticks to the foil so all you have to do is slide your spatula between the flesh and skin and the fish comes right off.  And clean up is a breeze!



Honey Mustard Dressing II

Ingredients:
¼ cup mayonnaise
1 tablespoon prepared mustard
1 tablespoon honey
½ tablespoon lemon juice

Directions:
In a small bowl, whisk together ingredients until combined and smooth.



Yum!

Succulent and crunchy with a sweet tang.
