French Toast Casserole

Good morning.  How was your Christmas?  Ours was wonderful.  We ate we went house hopping and the little boys can open their own toy store.

Every year for our Christmas breakfast I make French Toast Casserole.  Mike's Mom and her fiancee come over, we let the boys open presents, and then we eat.  This dish is nice because you can throw it together, put it in the oven and enjoy your family while it cooks.

French Toast Casserole

Ingredients:
1 loaf french bread (2-3 days old), cut into 1" cubes
2 1/4 cups milk
6 eggs
1/3 cup sugar, divided
1/4 teaspoon salt
1 1/4 teaspoon vanilla
2 tablespoons butter, softened
1 teaspoon ground cinnamon

Directions:
  1. Preheat oven to 350 degrees F.  Lightly butter a 9" x 13" baking dish.
  2. Place bread into prepared dish.  In a large bowl, beat together milk, eggs, 2 tablespoons sugar, salt and vanilla.  Pour egg mixture over bread.  Lightly press down on bread to help it soak up the liquid.  Dot with butter; let stand 10 minutes.
  3. Combine remaining 2 tablespoons sugar with 1 teaspoon cinnamon and sprinkle over the top.  Bake in preheated oven for 45 to 50 minutes, until top is golden.
