Soy-Glazed Salmon

I love to make salmon, and I have a couple go to recipes I use to prepare it.  But I'm bored.  I want a new way to enjoy my favorite fish.  So I googled (of course I did) and found this recipe from Martha Stewart's website.  It's easy, I already had everything in the house (score!) and it's delicious.  I served this salmon with some simple white rice, but I bet it would be really good with some Fried Rice too.



Soy-Glazed Salmon

Ingredients:
1/4 cup packed light-brown sugar
1/4 cup olive oil
3 tablespoons soy sauce
2 tablespoons fresh lemon juice
2 tablespoons water
2 pounds salmon fillet
Lemon wedges, for serving

Directions:
  1. Preheat oven to 400 degrees F, with a rack in the center.  Make the glaze: In a small bowl, stir brown sugar, oil, soy sauce, lemon juice, and water until the sugar has dissolved.
  2. Cut salmon into 4 equal-sized fillets; arrange skin side down, in a single layer in a foil-lined baking dish.  Pour glaze over the fish and brush glaze over top to coat evenly.
  3. Bake until fish is opaque but still bright pin inside, 15 to 20 minutes.  Baste fish every 4 to 5 minutes with glaze from baking dish.  Serve with lemon wedges.

I love using foil for this recipe for easy clean up.  The skin will stick to the foil a little, if you carefully slide your spatula between the meat of the fish and the skin they will separate for you.
